Eggs for Breakfast!

Eggs are a wonderfully versatile and flavoursome food to use as the centrepiece of a meal. They not only add colour and flavour but are a nutrient powerhouse being a great source of protein, healthy cholesterol, B Vitamins, Antioxidants and the Trace Minerals Selenium , Molybdenum and iodine (1).

Eggs fried in coconut oil with fresh salad

For about a year after changing my diet to Paleo l was having a pancake for breakfast which was free of gluten, dairy and processed sugar. I made it with coconut and buckwheat flour, water and eggs and usually topped it with a variety of fresh fruit. This helped me adjust to life without bread. As the months went on a started to have a smaller pancake and added in more nuts and seeds. Eventually l decided l didn’t need or want the pancake any longer and l haven’t had one for several months now.

Most days for breakfast l will have eggs but some days l skip breakfast as l listen to my body and often fast until lunch time. I may have a couple of pieces of raw dark chocolate or a handful of raw macadamia nuts early in the day, but being on a lower carbohydrate and higher fat diet has eliminated any early morning cravings.

If l am organised l make a breakfast fritatta which may or may not have meat in it. They are always delicious regardless of what goes into it. The basic ingredient is eggs and l usually add some home made stock and then vegetables and sometimes chicken. The fritatta can easily be prepared the night before and cooked in the oven while you are getting ready in the morning.

Poached eggs are a favourite of mine and l love to keep the yolks runny. I bring the water to the boil and then add the eggs and turn the water off. When the white is all cooked l take them out. I don’t miss the bread with the eggs at all after so many years of having eggs on toast.

Eggs fried in coconut oil are really delicious and turn out great every time. I usually have raw macadamia nuts with my breakfast to increase the fat content and find them a very filling and lovely snack.

A few years ago before l became unwell l was having a healthy omelette for breakfast or lunch each day. My Doctor back then told me l was eating too many eggs so l switched back to the cereal and toast. My current Holistic Doctor said l can eat eggs every day and encouraged me to go onto a higher healthy fat diet.

A final tip is to buy the best eggs you can and to avoid cage eggs. Also keep your eggs in the fridge and observe the useby dates.
