Chocolate Chip Cookies

These are so delicious and l just love them cold straight from the freezer. This makes about 40 cookies and l freeze them for snacks. You can halve the recipe if it is too many. I like to use the Loving Earth Brand of Chocolate and Organic Raw Cacao Powder because of the wonderful quality, but you could use other brands of chocolate or regular cocoa.

Ingredients:

2 cups of Almond meal (you should keep this in the fridge to maintain freshness)

1/2  teaspoon of sea salt (fine)

1/2 teaspoon baking soda (I use Bob’s Red Mill Aluminium free)

1 teaspoon cinnamon or more if you love it.

6 tablespoons organic coconut oil melted. A bit over is ok

4 tablespoons raw organic honey

2 teaspoons organic vanilla essence

A whole block (100g) of Loving Earth Organic Dark Chocolate sweetened with coconut nectar (or any other good quality chocolate you like). Chop into whatever size pieces suit your tastes. Small chunks are good.

4 free range eggs

1 cup of Buckwheat flour

1 cup of Coconut flour

1 tablespoon of organic raw cacao powder (optional)

Filtered water ideally. If not tap water.

Method:

Place all of the ingredients in a bowl. Add enough water that the mix is moist and forms balls when rolled in the palm of your hand. On a lined baking tray place eight small balls evenly spaced. Flatten slightly with your hand or something flat. Bake in a 180 degree oven until base is brown. Cool on rack and place in freezer.
