Crispy Rosemary and Poppy Seed Crackers

A versatile cracker that is deliciously crispy with a wonderful after taste. Top them with your favourite ingredients such as avocado or tomato. They are gluten, dairy and sugar free with so many uses from a snack to a whole meal depending on the topping. Try having them as a side to your main meal to add some crunch or with a hot bowl of soup. They are easy to make and can be kept for a few days in a container or frozen.

Ingredients:

1 cup of blanched almond meal (try to use blanched only as it is softer).

1 dessert spoon of extra virgin olive oil

4 dessert spoons of cool filtered water

1/2 teaspoon sea salt (pink rock salt or celtic sea salt are good)

3 teaspoons of activated sunflower seeds

1 teaspoon of fresh rosemary pieces.

2 teaspoons of poppy seeds

Method: 

Place all ingredients in the food processor using the chopping blade. Process until mixed well but not super smooth.

The mixture should be moist and able to be formed into a ball.

Place the mixture on a piece of baking paper and gently flatten.

Place another piece of baking paper on the top and gently flatten with a rolling pin.

Roll out until thin enough that the mix can still be picked up and not fall apart. About 3 mm but use your judgement.

Cut off the rough edges using a pizza cutter and then slice into rectangles.

Gently pick each piece up and place on a tray lined with baking paper. Roll the scraps up and repeat the process until all have been used. The final piece is hard to get perfect so l used this as my taste test when it was cooked.

Bake in a pre-heated oven. I cooked my crackers at 170 degrees in a fan forced oven but as each oven varies you will need to experiment. Lower is better than a higher temperature as you don’t want them to burn or dry out too much. Bake until just golden, remove from the oven and let cool on the tray.

A really tasty and versatile cracker. After you have made one batch and tested your oven etc l would double the recipe next time as they will be eaten very quickly.

Coconut and lime tart with a rustic base

This is a raw and frozen tart that is delicious and flavoursome. The smooth top layer blends well with the rustic coconutty base.

There are 2 stages to this tart which are making the base and the top layer. The process is very quick and it sets in the freezer in a couple of hours.

Ingredients and method:

Base:

1 cup of nuts (I used raw activated almonds-your choice). If you want a smoother less rustic base you could use blanched almond meal. I like the base crumbly.

1 cup organic shredded coconut

8 large organic medjool dates (seeds removed)

Place all of the base ingredients in the food processor and whiz until well combined and broken down.

Have a pan greased and ready. I used one where the edge is serrated and the base comes out. Grease this well with coconut oil. Place the processed mixture into the pan and push down well with a spatula and then your fingers. It should be even and well compressed.

The base is nice and flat and will make a good base for the tart.

Carefully place the tart in the freezer for about 30 minutes to firm up. If you use the pan l did hold the base with your hand while you do this.

Top layer:

2 large avocados (skin and seed removed)

2 generous tablespoons of raw organic honey (gently melted)

Juice and zest of one lime

1/2 cup organic coconut oil (gently melted)

1/2 cup raw macadamia nuts

1/2 cup organic shredded coconut

Place all of the ingredients in the food processor and whiz until smooth.

Taste test to check the flavour. It should have a nice zesty lime flavour.

Pour the lime mixture onto the frozen base and spread out evenly using a spatula.

Spread the mixture right to the edges.

When it is even place the tart gently in the freezer for a couple of hours.

Lift gently onto a flat surface in the freezer.

Use a clean sharp knife to carefully cut the tart. Lift it onto the plate using a cake server. Serve by itself, with some fresh fruit or a topping of raw organic dark chocolate finely sliced.

Creamy broccoli soup

A hearty soup with loads of personality!

A delightfully flavoursome and creamy soup.

When l told my family we were having broccoli soup for dinner they did not look happy. There fears melted away when they took their first sip of this lovely filling soup. Healthy vegetables are combined with a nutritious stock to create a comforting and mild flavoured soup.

Ingredients:

The vegetables are washed and chopped and are in the saucepan with macadamia oil, pink rock salt and black pepper.

2 long sticks of celery

1 head of broccoli

1 good sized brown onion

1 medium sized red sweet potato (white flesh)

pink rock salt and black pepper (season to taste)

2 generous cups of home made chicken stock (recipe on website)

Wash and chop all of the vegetables and place in a saucepan. Coat the vegetables with a small amount of your favourite oil (I used macadamia oil), and a small amount of seasoning depending on your tastes. Brown the veggies on low heat until just soft. At this stage add the chicken stock and let simmer for at least an hour.

When the vegetables have softened and are breaking apart, take the pot off the stove and blend the mix with a hand mixer until smooth. Place back on the stove and let cook for another good 30 minutes then serve. If you don’t have a hand mixer you could let it cool and then place in a blender before placing back on the stove.

I roasted a chicken while the soup was cooking and served this with the soup. This added protein to the dish and made it a hearty meal. The addition of the snow pea sprouts was a lovely garnish, both for its refreshing flavour and bright green colour.

Beetroot and walnut cake!

A lovely cake which is Paleo friendly, gluten, dairy and processed sugar-free. Before this cake is cooked it is the loveliest pink colour which unfortunately disappears after it has been baked in the oven.

Ingredients:

2 cups almond meal

1/4 cup organic coconut flour (no need to sift, just squash the lumps))

6 free range eggs (700g)

A generous 1/4 cup organic coconut oil (gently melted)

A generous 1/4 cup raw organic honey (gently melted)

1 teaspoon organic cinnamon

1 teaspoon bicarbonate soda (Bob’s Red Mill Aluminium free ).

One small fresh beetroot peeled and grated

1/2 cup raw activated walnuts chopped roughly (or just raw walnuts)

Extra whole walnuts for the top of the cake.

Place all of the ingredients in a mixing bowl and gently combine with a spatula.

Place the mixture in a greased and lined baking tin. Smooth the top with a spatula and then place the extra whole walnuts on top of the cake

Bake in a 180 degree celsius oven until golden and quite firm.

Remove the cake from the oven and run a knife around the edge of the cake to separate it from the tin. Turn the cake gently onto the cooling rack, remove the baking paper from the bottom and turn over.

Apple and cinnamon cake-A Paleo friendly recipe.

Since l have adopted the Paleo diet this cake has become one of my favourite snacks, being gluten, dairy and processed sugar free.The mix of coconut, cinnamon and apple is really enticing and satisfying. The picture below shows that this cake is very versatile and you can make one cake or easily double the recipe so that one or two can go into the freezer.

A change in thinking:

Most cakes eaten in my life before adopting the Paleo diet had as ingredients butter/margarine, wheat flour, milk and white sugar. Thinking about ways to make a cake that tasted good not using those ingredients has been a challenge but also exciting. This recipe is so flexible and there are other variation on the website such as sweet potato/walnut, banana/coconut, beetroot/pumpkin and banana/coconut/lemon/poppy seed. All of these cakes are so nice and have the same basic ingredients with just a switch in the spice and fruit/vegetable added.

Ingredients:

2 green apples (diced finely or coursely, skin on/off)

2 cups almond meal

1/4 cup organic coconut flour (no need to sift, just squash the lumps))

6 free range eggs (600g or 5 eggs for 700g)

1/4 cup organic coconut oil

1/4 cup raw organic honey

1 teaspoon organic cinnamon

1 teaspoon bicarbonate soda (Bob’s Red Mill Aluminium free ).

Chop up the apples into small pieces and it is personal preference as to how finely you dice the apples. It is your choice as to whether you leave the skin on or not. The skin will add additional fibre and nutrients, but often there is a wax on the skin which you don’t want to eat. Place the apple in a saucepan with the organic coconut oil and cinnamon and bring to a gentle boil then simmer until the apples are soft. The smell in your kitchen will be amazing. If your honey is solid because the weather is cold you can also add it into the saucepan to melt.

While the saucepan mix is cooling add all of the other ingredients into a bowl, then add the contents of the saucepan to the bowl and mix together gently.

Place mixture in a greased and lined loaf tin or tins depending on whether you doubled the recipe. Sometimes l add flaked almonds to the top of the cake and this is a nice touch. Bake in a 180 degree celsius oven for approximately 40 minutes or until the middle of the cake is firm.

I used three smaller tins with double the recipe here. Smooth the top of the mixture with the spatula before placing in the pre-heated oven.

You will know when the cakes are almost done as your house will be smelling amazing. Remove the cakes from the oven and cut around the edges with a knife to gently separate from the tin. Gently turn onto a cooling rack, remove the baking paper and flip over to cool. This is a good time to have a piece as it is so delicious when warm. I use a serrated knife to cut the cake and this works better than a regular sharp knife.

Hint:

When cool, l slice this cake into single portions, wrap in glad wrap and freeze. When l am working and pack a lunch l just pop a piece into my lunchbox. Now my husband has realised how delicious it is l make double batches every few weeks to keep up the supply.

Cherry and Pumpkin pancake (gluten, sugar and dairy free)

A really lovely way to start the day!

The selection of pancakes on this website is rapidly growing as l start to experiment further with non gluten flours and ingredients. This pancake was inspired by my purchase of a container of fresh cherries and l thought they would go very well with pumpkin. There is a good amount of fibre in this pancake and so many wonderful nutrients.

I like to assemble the ingredients on the bench so that everything is on hand.

Place in a bowl:

1 cup of organic buckwheat flour

1 cup of organic coconut flour

1/2 cup organic quinoa flakes

1/2 cup ground pepitas (I did this in the food processor)

4 free range eggs

1 full cup of finely grated pumpkin (I used the fine shredding attachment on the food processor)

10 cherries seeded and chopped in the food processor

Add approximately 2 1/2 cups of filtered water and mix well. The quinoa flakes will absorb water and you want it firm enough that you can make a small ball in your hand but still quite wet looking.

Place a small amount of mix in a pre-heated pan with olive oil added and cook on a lowish heat until golden.

Cook until golden on both sides.

Top the pancake with your favourite toppings but l used raw walnuts (soaked and dehydrated), diced fresh cherries, raw pumpkin seeds (soaked and dehydrated) and organic maple syrup.

I really love spending time preparing lovely meals and making them look nice on the plate. I try to sit down and eat mindfully to support my digestion and mostly keep fluids separate from my meals also.

Morning pancakes- Paleo (dairy, sugar and gluten free)

Berries galore!

I really enjoy my morning pancake and make a new batch every few days. I have a base recipe that l add different ingredients to including frozen berries, sweet potato, carrot, pumpkin, apple and cinnamon. I usually top them with activated walnuts and maple syrup.

Base Recipe:

1 cup organic coconut flour

1 cup organic buckwheat flour

1/2 cup organic quinoa flakes

1 tablespoon black chia seeds

4 free range eggs

Flaked almonds (optional depending on what else you are adding)

Lots of filtered water (The quinoa flakes and chia seeds will soak up the water so you will need to make it a bit too moist to start with and let it sit)

To this basic mix you can make:

Berry pancakes by adding blueberries, blackberries, raspberries or strawberries as examples. You could have just one type of berry or a mix. You can blend this up to make a really colourful pancake or use whole berries. You can also keep the mix plain and add the berries to the pancake when in the pan which will stop the colour bleeding into the mix and keep the berries fresh. Frozen berries are good for this purpose.

Apple & cinnamon pancakes by adding one or two green apples with a good teaspoon of cinnamon.

Sweet Potato by grating a medium sweet potato into the mix

Carrot & Pumpkin by grating some of each of these into the mix.

Grated carrot, sweet potato or pumpkin is a delightful addition to the mix.

If the mixture is quite firm you can make a ball in your hand and then flatten it and place in the pan. If it is moist then use a spoon and shape it into a neat circle in the pan. I use olive oil to cook my pancakes and have a tub of activated walnuts in the fridge. In the morning l just take the pre-prepared mix out of the fridge, cook it up and add my toppings within a few minutes. I try not to run out of mix in the mornings and make it the night before. Eating a pancake without gluten, sugar or dairy does take some getting used to but our taste buds adapt very quickly and l find these pancakes very satisfying and filling.
